Kopi Luwak (Civet Coffee)

The Luwak (Paradoxurus hermaphroditus) denizen of the coffee (kopi) plantations of Java, Sumatra, and Sulawesi, eats only the ripest coffee cherries.

Unable to digest the coffee beans, the Luwak graciously deposits them on the jungle floor where they are eagerly collected by the locals.

The stomach acids and enzymatic action involved in this unique fermentation process produces the beans for the world’s rarest coffee beverage.

Kopi Luwak it’s becoming very rare now a days. i’ve tried to search all over indonesia and very hard to find the real luwak coffee. Lately i’ve heard story  A scientist named Massimo Marcone, at the University of Guelph, in Canada. try to make an imitation of kopi luwak by fed Ethiopian coffee to Ethiopian civets,he picked out the beans with his own two hands, roasted them, and brewed himself a cup. The result was an artificial Kopi Luwak.

The scientist reported his findings in a journal called Food Research International. He discovered that the coffee is changed a lot by the civet digestion process, which is why the coffee allegedly tastes so much better than regular coffee. The imitation Kopi Luwak the scientist made using Ethiopian civets did not taste the same as real Kopi Luwak, since the animals did not seem to break down the coffee the same way Indonesian civets do. He does not plan to perfect the process to make the coffee taste like real Kopi Luwak. -Thank goodness!-

So i think My Indonesian People would try the same way to produced the real Kopi Luwak by real Indonesian Coffee and civet.
